What is the recommended connection method. There appears to be no reference to the plugs/pins to connect this to the ESC.

Yes you would usually solder direct to ESC.
Any standard sensor wire will work eg ET0396B

Yes, the TBLE-02 runs down to 10.5T motors (it's right on the limit though!)

Hi, what is the max input voltage of the Speed Passion V3.0 Competition Brushless Motor - 10.5T, will it safely operate on 3s 11.1 Lipo? Can it also be paired with an LRP Spin Pro Brushless Esc -80250.

These are only designed for 2S LiPo.
I'm not familiar with that ESC and it's not one we sell, but yes it looks like it would run it
