would a 8.4v nimh battery work?

Yes, it can handle up to 3S LiPo so 8.4v NiMh would be fine.

Yes they can run 3S - but 2S is normally the sweet spot.

Does this car have lockable and unlock-able differentials?

No these are fixed locked diffs.

For remote diffs, you want to look at the Traxxas TRX4 eg TRX82056 or TRX82096

How waterproof is this car?

Reasonably - the ESC etc is waterproof and the receiverbox has a waterproof seal.

Ultimately - no car is designed for running along the bottom of a swimming pool, but they should be fine splashing through puddles and shallow streams etc if well maintained.
