Does this need breaking in or is it ready to go?

These are ready to go - maybe just take it easy for the first 5 minutes or so.

What the lowest volts for this moter

They are designed to run from a 7.2v source. I'm afraid eTronix don't quote a minimum voltage. They will likely run on lower voltages, just at a lower RPM

Can you state what sort of rpm I could expect from this 19T? Would this be suitable for a 2wd buggy (Tamiya DT 03). Or could you suggest a better option at this price point? I hope to get higher rpm than Tamiya Sport tuned. Thanks in advance.

Afraid RPM is not quoted. But yes, that should be OK in that buggy

Would this be a good (best?) choice to give a good balance between speed and endurance when replacing an 18T/2 Trinity motor in a restored Cougar 2 with a Etronix Probe ESC? Car not intended for racing.
