These will only bind to a Spektrum DSMX transmitter

HBZ8180EU does this come with an RC unit - I don't understand the explanation in the description

No, these are BNF (Bind N Fly) - so include everything except the transmitter. 

They will bind to an existing Spektrum DSMX transmitter, or you may be better looking at an RTF (Ready to Fly) model which will include a transmitter.

what is the biggest battery it will take

The recommended battery is the EFLB13003S20 

Larger batteries will fit... but you'll be throwing off the centre of gravity and adding weight - so best to stick to the original in our opinion
