Could this run a 3s LiPo on a 2.5kg 4wd truck or is that too much to ask from it? If not what would you recommend?

2S would be your max really on that setup.
If you want to run 3S look at the lower KV options

Would this bundle, Hobbywing MAX10 SCT ESC Combo With 3660Sl 4600Kv Brushless Motor, be better than the Absima Thrust 1:8 Eco ESC Combo With 2300kv Brushless Motor for the FTX vantage

For your vantage you would not use the SCt version as they come with a 5mm motor shaft, you could look at HW38010203 this would work. the absima1:8 would possibly be to big for the car.

Does this come with a mounting plate for the esc and is there an option to get a deans connector pre soldered on?

No, there is no mounting plate for the ESC ( it comes with some double sided sticky pads ), there is no option to have soldering done but it will come with an XT60 connector so you could use this adapter ET0842
