The Overlander Tornado Thumper V3 5055/06 580 KV brushless outrunner (part number OL-2987) is the latest model in the Thumper range, engineered to deliver reliable, efficient power for propeller-driven RC models. Built to Overlander’s demanding standards, it features precision CNC machining and an exclusive black finish to aid heat dissipation.
With a 580 KV wind and up to 1280 W output, this motor supports 3–8S LiPo or 10–22 NiMH setups. Suggested propeller sizes span 14x6in to 17x10in (use larger props with fewer cells). An 80 A speed controller is recommended, and the motor weight is 279 g.
High-quality materials, including Neodymium magnets and high-temperature winding wire, provide durability and consistent performance. For a cohesive power system, the Thumper V3 range is designed to work as a total performance package when used with Overlander XP2 Speed Controllers.

Yes that should be fine as a conversion.
Yes that size and kv would be pretty good
Two rules of thumb that you can use to work this out are:
100-200 W/# (for 3kg -> 6.6#, that's between 660W to 1320W)
or
2000 W/cin displacement (for 10cc -> 0.61cin, that's 1220W)
You're looking at around 1kW motor, with 1200W probably around the sweet spot. Yes, those tend to come in at the 300-500kv range, but not all motors with that kV can generate that much power. You're also looking at 40-80A on a 6S battery pack (55A + for 1200W) WOT to generate those kinds of power.
That should be OK. It's impossible to say for sure without it setup and a watt meter, but as a ballpark that should be fine.
