I want to use this on a scale crawler with a 3 speed transmission and 2 speed transfer case, will channels 3 and 4 be suitable for 3 speed and 2 speed shifting via servos?

Yes this will work for you, you may have to set the programming of the channel for the 3 speed on the handset so that the switch is a 3 position one, ( but easily done )
