The ion motor heatsink. Does it come with the paste to attach it to the motor? How effective is it at lowering motor temperature

No, we wouldn't usually run any paste.

It'll help to reduce temperatures.

I have a 1/18th scale Maverick Truggy. I have found that after a few minutes of quick use the car stops, the steering still works but no drive. Do you think that a motor heatsink would prevent this?

That does sound like thermal cut-out is kicking in, so yes a heatsink would probably help in your case.
