Yes that should be fine as a conversion.
Yes that size and kv would be pretty good
Two rules of thumb that you can use to work this out are:
100-200 W/# (for 3kg -> 6.6#, that's between 660W to 1320W)
or
2000 W/cin displacement (for 10cc -> 0.61cin, that's 1220W)
You're looking at around 1kW motor, with 1200W probably around the sweet spot. Yes, those tend to come in at the 300-500kv range, but not all motors with that kV can generate that much power. You're also looking at 40-80A on a 6S battery pack (55A + for 1200W) WOT to generate those kinds of power.
That should be OK. It's impossible to say for sure without it setup and a watt meter, but as a ballpark that should be fine.
