You'd want to use MDP5524821 Aliphatic glue to assemble.
Once built I'd then seal with sanding sealer GLDCEX1100250 and a varnish used to waterproof model.
They are a great kit to work with yes.
Dumas reccomend a twin 6v motor setup. However, you'd probably be able to run a single screw setup if you prefer - this would be something you'd need to modify yourself though.
This kit is made almost entirely of 1/8 in mahogany plywood.
