All Overlander Sport Track 55C LiPo cells are manufactured using the "STACKING" method, unlike many of the cheaper Chinese imports which are manufactured using the "WINDING" construction, a much cheaper construction method, with very limited discharge rates (15C - 18C) but often quoted as 30 - 35C. Stacking construction is known for its longevity, and gives stronger more reliable voltage.

Would this be okay to run with a Hpi 4800kv motor and a Hpi vapor esc ? Do you know if it would fit in a vaterra v100 ?

Yes, the 106627 Vapor ESC is rated for 3S on the 4800kv HPI motor, however as ever please be sure to check your gearing and keep an eye on motor/ESC temperatures.
I cannot be 100% certain but I believe this should fit the V100. This pack measures 139 x 47 x 25mm, so please check dimensions to be sure.

Can the Hobbywing Quicrun 10BL120 ESC G2 Combo With 3652SL 4000Kv G2 Motor use 11.1v 3cell ? The description says 2-3 cell but I think it says 7.4v ? Not sure

This will depend on what you are putting the motor and ESC in, a touring car will be 2 and 3s but a monster truk would be 2s only.
